Fennel is an annual plant with a thick base, shaped like celery bulb. Fennel has an aniseed flavour and fragrance and all its parts, including roots, stems, leaves and seeds are edible. Native to the Mediterranean, fennel was first cultivated by the Greeks and Romans, its use as an herb and spice it spread to other regions.
In the kitchen we will use it in stir-fries, you can also cook boiled or steamed or add raw sliced in salad. You can collect a few leaves while the bulbs are growing to flavour salads and side dishes. It is complementary with the fish dishes and is widely used in Italian dishes.
We must sow directly outdoors, because Fennel is sensitive to transplant. Planting will be between spring and summer. The soil should be watered, you have to do spaced furrows 40 cm apart, put the seeds at 1 cm depth in them and spaced 20 to 30 cm. It do not need much care, will grow by itself if you are generous with watering. For a continuous supply, you must be planted each two weeks. It must be harvested when the bulb has about 7 to 10 cm in diameter, cut off the stems just above the base.
Fennel must be placed away from other plants, because they are very greedy and they compete with any plant.
