Rosemary is a perennial plant that can grow up to 1 m in height. Its leaves are like soft pine needles, with very pale blue flowers. It is one of the most common spices in every kitchen. Its aromatic capacity is very high. The seeds of this variety we offer are Organic.
 
Rosemary is native to the dry hills of south Europe and North Africa. It is very hardy, needs low maintenance and survives on poor soils, their flowers attract bees and beneficial insects. It is also appreciated for its ornamental use, it can be grown like trimmed hedge, like a hanging plant over the edge of a wall or like courtyard plant in pots.
 
You will get more aromatic and tasty plants if you cultivate from seed, although Rosemary will not be ready for harvest until next year, but after this time you can collect throughout the year. It can live 15 years, pruning it once a year.
 
Planting is from September to October and from March to May. We have to sow superficially and press the seeds lightly on the soil but don't cover them, because they need light to germinate. Rosemary is slow to germinate, so it is advisable to sow in seedbeds before, keeping at least 21° C. Later, when the plant is larger and without risk of frost, it can be transplanted to the garden or pots. We have to find a very sunny and warm place and well-drained soil. Rosemary is a plant that likes drought so we should not water much. It isn't demanding and don't requires maintenance, it can be pruned lightly in late spring to maintain the desired shape. If we choose pots, they should be very deep, because the rosemary has a long root. The plants in pots may be affected from frost, especially the first year, so it is best to move the pots to nearby walls or protect places.

The leaves can be selected at any time, as needed. For storage we can dry twigs and store whole in glass jars. We can store it in jars with olive oil too.
 
It is used to flavor a variety of dishes. It adds incredible flavour and fragrance to meat (it is basic in roast lamb), fish, vegetables, soups and stews and roasted potatoes too. It is widely used with other herbs in vinegar or oil, for sauces or dressings. We can consume both, fresh and dry.
 
Rosemary is used to relieve colds, headaches and prevent anaemia. The rosemary tea stimulates the activity of the liver and improves blood circulation, is also used to treat food poisoning and to purify polluted water (boiling water with twigs of rosemary). It has stimulating, tonic, antioxidant and cleansing properties. Also has great benefits for the skin and hair using it externally. It is widely used in cosmetics and perfumes. Its oil has been used for centuries to treat muscle aches.
 
We can plant rosemary with cabbage, beans and carrots, since it repels predators, is a very good companion of sage too.
