Description

Celeriac Prinz is a variety of top quality, very thin skin and suitable for pots. It is ideal for early protected cultivation and late cultivation in open field, because it is very resistant to bolting. The seeds of this variety we offer are Organic.

It produces white, medium and smooth roots, with a slight taste of celery and anise, but easier to grow than celery. Its flesh has a crisp texture and its leaves add flavour to salads, soups and stews.

Planting is from February to April. It needs at least 15°C to germinate, so in February, in some areas, it is advisable to sow in seedbeds indoors and to transplant outside in May. We must choose a wet but sunny place. We sow superficially trying that the seeds are separated by about 30 cm, then we cover lightly with soil. It may appear side shoots that we have to prune to favour the turnip root is fully developed. The soil must always be wet.

It ripens in about 95 days, we harvest when the root diameter reached 10 cm. We  usually cut first the leaves and then, remove the turnip using a suitable tool. We must wash them well, as they have a tangle of tiny roots which adheres a lot of soil. They can withstand a little frost, even improve the taste because the cold stimulates their starches to produce sugar. But we must harvest before they start very strong frosts. For this resistance, the Celeriac hold in good condition between 4 and 6 stored in the fridge or in a cool dark place.

Celeriac is prized in the Central European and Asian cuisines where the celery isn't cultivated easily. It is a very useful plant. It can be combined with other root vegetables, add to soups, salads, fried, au gratin, and even used as a substitute for potatoes in some recipes. If the taste is somewhat bitter, you can boil in water about 10 minutes before use. Once its skin is peeled, we should consume or cook the celeriac immediately, because their meat is oxidized on contact with air as occurs with apples.
 
It is a very low-calorie food. It is source of vitamin C, folic acid, fiber and minerals such as calcium, phosphorus, potassium and, to a lesser extent, sodium. It has antioxidant properties, it strengthens the body's defenses.
 
Celeriac can be planted with lettuce, spinach and peas, but we should avoid placing it close to cucumbers and pumpkins.
